If you’ve been following me for any length of time, you’ll know I am a HUGE fan of slow cooking. (I just can’t get enough of that deep, cozy comfort food!)

How to Make Crockpot Chicken and Sweet Potatoes

This recipe moves easily and rewards patience.

1. Prepare the crockpot

Lightly grease the inside of the crockpot with olive oil or butter. This helps prevent sticking and adds flavor at the base.

2. Add the sweet potatoes

Place the sweet potato pieces into the bottom of the crockpot. Spread them out evenly so they cook at the same pace.

3. Season the chicken

Season the chicken thighs generously with salt and black pepper on all sides.

4. Layer the chicken

Place the seasoned chicken on top of the sweet potatoes, skin side up if using skin on thighs.

5. Add garlic and rosemary

Scatter minced garlic and chopped rosemary evenly over the chicken and potatoes.

6. Drizzle with fat

Drizzle olive oil or dot butter over the top to help everything stay moist and flavorful.

7. Slow cook gently

Cover and cook on low until the chicken turns tender and the sweet potatoes soften fully.
